They are fantastic for DIY Christmas food gifts or parties. This vintage recipe is one of my favorite no-bake sliced cookies.

Here the layers comprise a confection of cream and mascarpone, seasonally spiked with Advocaat, full of crystallised ginger, figs and nuts, and that essential component of Christmas: gingerbread.

A slice that keeps well in the fridge (up to one month), so perfect to bring out when you feel like a sweet treat. Use NZ apricots as they are slightly tart and give a better flavour to the slice.
